Caramel Apple Pie Christmas Cookies #CookieEggChange

I love to spend time in the kitchen — most especially during the holidays. Baking reminds me of magical afternoons in my grandmother’s kitchen in Newfoundland when I was a little girl. After school, I became her kitchen assistant and helped her measure, mix, and of course, taste test by licking the beaters. During the holidays, baking was in full swing. To this day, some of my favorite recipes are the ones we created together. Those are memories I will cherish forever. I’m so glad that now I’m able to share special traditions with Sam. Just like his mama, he loves to play helper in the kitchen!

During the holidays, I do a lot of baking. I create treats for our family, as well as goodies for neighbors, teachers and for entertaining. Nothing says Christmas like a big tray of tasty cookies! Burnbrae Farms offers so much inspiration for holiday baking with tons of great recipe ideas. As much as I love my grandmother’s recipes, I also like to experiment with new sweets as well. You never know what treat you’ll fall in love with next! I have a couple of cartons of eggs in the fridge, apples from our local farmers’ market (there are so many awesome varieties to choose from right now) and a jar of caramel that “needs” to be used up before it expires. These three ingredients inspired my latest experiment: caramel apple pie Christmas cookies.

Burnbrae Farm Eggs for Christmas Cookie Recipe

I know I am not alone when I say I feel like fresh ingredients make all the difference. My cookie recipes are made even better with quality eggs from Burnbrae Farms. Their eggs are packed with protein, amino acids and healthy vitamins that make me feel good about sharing.

Apple pie caramel cookie recipe

INGREDIENTS

  • 1 cup of butter
  • 2/3 cup of sugar
  • 2 Burnbrae Farms eggs {You could also use their Liquid Eggs!}
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups flour
  • 1/2 cup chopped walnuts + more to garnish
  • 1/2 cup white chocolate chips + more to garnish
  • 1 large apple peeled and finely chopped
  • 1/4 cup of your favorite caramel
  • brown sugar and cinnamon to garnish

Apple Pie Cookie Ingredients

DIRECTIONS

  • PREHEAT oven to 350 degrees
  • CREAM butter and sugar
  • ADD eggs, vanilla, salt, baking soda, baking powder and cinnamon.
  • BLEND until well-mixed.
  • GRADUALLY add flour and continue to blend on low
  • FOLD in walnuts, apples and white chocolate chips
  • SPOON batter onto greased cookie sheet and create a small well. (See photo)
  • PINCH sides of well together to close in caramel.
  • TOP with extra white chocolate chips, walnuts and cinnamon.
  • FLATTEN with spatula.
  • BAKE for 12 minutes.
  • COOL before eating (tastes even better the second day).
