Banana Caramel Yogurt Trifle
Growing up in Newfoundland made Lucy Maud Montgomery’s Green Gables especially appealing to me. After all, Prince Edward Island was almost in my own back yard. Like a lot of young girls, I loved immersing myself in Anne Shirley’s world. I liked her spunk and can-do attitude. I was happily at home with Marilla and Matthew. I fell in love with Gilbert, right along with Anne. Anne and I were kindred spirits. I was certain we would be “bosom friends” if we ever met. Even today, especially at the beginning of a New Year, I remember Anne’s observation, “Isn’t it nice to think that tomorrow is a new day with no mistakes in it yet.”
So…New year. New beginnings. Happy 2016! Just coming from a celebratory season that includes all sorts of decadent desserts, I’m especially aware of getting back to more mindful eating. In the party world, sugar is a permanent resident, but I also like to include desserts and snacks that taste terrific and aren’t too indulgent. Enter: Yoplait® yogurt.

BANANA CARAMEL YOGURT TRIFLE
- 1 angel food cake
- 4 yogurt containers (1 per serving)
- 4 bananas (1 per serving)
- 1.5 cups cream
- Angel food cake
- Low sugar strawberry preserve
Repeat and top with light cream.
