Bacon Mac & Cheese Hot Dogs

The first house Mike and I lived in was a rental. We had both been living in apartments previous to that. In fact, before I was married I was paying my dues as I built my marketing career and lived in some pretty suspect areas. We were so excited that the rental house had air conditioning and a garage, as well as a big back yard and deck. One of the first things we did was buy a little barbecue for that deck and invite a dozen friends over for a BBQ. Mike staked out the deck and BBQ area as his manly domain.
Everyone was having a good time, hanging out, waiting for our feast. After about 30 minutes, Mike came in smiling, with his tray piled high with hot dogs, burgers and chicken. It was all one color black. He had basically turned the BBQ on high and burnt everything. The meat had a fine, burnt husk on the outside and it was all uncooked in the middle. We ordered take-out to feed everyone and continued on with our housewarming party. To this day, more than 11 years later, I do all the grilling at our house!
We actually grill out frequently now. We love being outside, on our deck. Somehow, food cooked on the grill just seems to taste even better. - 1 cup elbow macaroni
- 1 cup cheddar cheese, shredded
- 3 tablespoons milk
- 1/4 teaspoon salt
- 4 slices of bacon, chopped
- red pepper flakes (optional)
- Cook macaroni according to directions on package. Once cooked, remove from stove and drain. Stir in cheese, milk and salt. Microwave on high in two bursts of 20 seconds each, stirring between (or until cheese is melted). Fold in bacon. Sprinkle with red pepper flakes if extra heat is desired.
- Grill hot dogs for about five minutes on each side, turning frequently over medium heat, until the hot dogs are nicely browned.
