Avocado Popcorn Shrimp Salad
Since my home town is a fishing community, I grew up eating and enjoying fresh seafood. I even caught it myself. One of my most vibrant childhood memories is when I was about the age Sam is now. I was out on the Atlantic Ocean, jigging for cod with my father and his father, who was a fisherman by trade. I bragged for days to anyone who would listen that the fish I caught was bigger than anyone else’s catch that morning!
Fast forward to today: I still crave the satisfaction of quality seafood even though we live far from a coastal environment. It’s not just the taste — seafood is such a great healthy and lean protein alternative. Although most families don’t have it that often, some sources (like the U.S. Department of Agriculture) recommend at least two servings of seafood per week. My husband, Mike, likes all kinds of seafood as much as I do. Even Sam, who is such a picky (and sometimes impossible) eater, loves salmon as much as he loves chicken. With my hometown thousands of miles away, I’ve had to hunt to satisfy our seafood crave.
