15 Minute Balsamic Vinegar & Caramelized Onion Chicken Rotini

I don’t know. But for now, strangely, that’s OK. The change-up in routine has made me a little giddy!
Sam is enjoying making friends at his new school. I was a little worried about that before the move. Mike is still busy with work. I’ve been attempting to make décor decisions about the new house but until we move in, I can only go so far with that. It leaves me a bit footloose, which is not a bad thing, especially with the gorgeous spring weather.
Since I’m sharing my sister-in-law’s kitchen, I try to be mindful of not taking up too much space or time. She’s gracious and shares very nicely but I don’t want to get in the way, you know?
We’re having a great time sharing a lot of meals but sometimes I just want to get in and out of the kitchen and on to the next thing. So, I’ve been making some of my easiest tried-and-true recipes. Chicken Rotini is a favorite.
I swapped out plain pasta sauce and used Bertolli Riserva’s Tuscan-inspired Balsamic Vinegar and Caramelized Onion sauce—delectable! The balsamic vinegar gives a deep, rich color to the sauce and adds rich flavor that complements the sweetness of caramelized onion—which leads to compliments to the chef! It’s a quick way to up the flavor from pretty good to really good: I made this favorite in 15 minutes.
- Cook pasta according to package instructions
- Drain and put back in the pot
- Add precooked chicken and Bertolli Riserva sauce and warm through
- Garnish with heirloom tomatoes and chopped flat parsley
