I'm partnering with a great group of bloggers to participate in a Summer Recipe Party. We're serving up some of our favorite summer party recipes. The one I am going to share is actually my new obsession: Strawberry Sundaes for Adults. Other delicious recipes on the menu at this blog party include cotton candy shooters, pineapple and blueberry salad as well as spritzers and spiked punches.
As I mentioned, my recipe for this party is my new obsession. It started as a bit of a fresh salad that I could eat by the bucketful. I'm not lying when I saw I am obsessed. Best of all, it's super easy to make.
To make enough for 4-6 people, first cut a 1/2 a pound of strawberries into quarters. Then chop about 4 large leaves of fresh mint. (When I am eating the mixture as a salad, I chop the mint very finely as I find it overwhelming otherwise. The sundae version can handle larger pieces because of the sweetness of the ice cream.)
The next step is to pick a good quality vanilla ice cream and scoop it into a bowl. Top it with the strawberry and mint mixture. Then it's the part that brings this all together. Instead of adding chocolate sauce, you pour about 1 tablespoon of HIGH QUALITY balsamic vinegar over each sundae.
If you don't want the ice cream sundae version, make the strawberry-mint mixture and top it with a tablespoon (or two) of balsamic vinegar. It is sooo good. The balsamic vinegar cuts through the sweetness of the strawberries so nicely. Without the ice cream, I can eat it for every meal and not feel one bit guilty.
